Lemon Cake (лимонний торт)

This is one of the best lemon cakes that you will try. It is very moist and delicious. I make it very often and it is loved by many.

Ingredients For The Recipe:

  • 6 eggs
  • 1 cup of sugar
  • 1 cup of sifted flour
  • 3 tablespoons of Hershey’s Cocoa
  • 1 teaspoon of backing powder
  • 1/4 teaspoon of vanilla powder

Directions

  1. Add eggs with sugar into the mixer bowl and mix on medium speed for 20 minutes.
  2. Mix all the dry ingredients together in a separate bowl.
  3. After the mixer is done mixing, add the dry ingredients a little at a time and mix it into the egg mixture with a spatula.
  4. Divide the mixture in half and pour into two round cake pans. (place foil paper on the inside of the cake pans and spray with stick resistance spray). Bake at 350 F for 35 minutes.
  5. Take out from the oven and let it cool down.
  6. Take each of the layers and divide in half. You will have four layers. Use a knife to go around the layers and make them equal in size. The left over crumbs you will use to decorate the cake.

Ingredients for cream:

  • 1/2 quart of heavy cream ( mixed in the mixer on medium speed for four minutes).
  • Then add 1/2 can if condensed milk into the mixture and mix for 1 minute
  • Take half a lemon and squeeze the juice out into the mixture and mix with a spatula

Ingredients for the syrup to soak the layers of the cake:

  • 1/2 cup of boiling water
  • 1/4 cup of sugar
  • Take the other half of lemon and squeeze the juice out and mix.

Note: Take the bottom cake layer and soak with the syrup and then cover it with cream. Add the next layer on top and repeat the steps until you use up all layers. The left over cream you will use to cover the top of the cake and the sides. Take the left over crumbs and shred. Sprinkle them on top and the sides of the cake as shown in the image.
