Zephyr With Apricot Jam

Zephyr Is a well known slavic recipe, It has a very great taste, and in my recipe we are going to make it with apricot jam which makes it taste phenomenal.

1.) To start the recipe, grab 2 small bowls and split your eggs into egg yolk’s and egg whites. In a large pot add your sugar and agar, Also pour in your water. If you want you can also add a drop of food coloring as I did. Mix together well and place it on the stove on a medium heat until it starts to boil. (Mix Occasionally). In a mixing bowl add your apricot jam and egg whites. At a medium speed beat your mixture for 6 minutes.

2.) Once your sugar mixture reaches a temperature of 110ºF then pour it slowly into your other mixture. Beat for around 5 more minutes. Add your whole mixture into a piping bag with a star trip. Place some parchment paper and start to pipe out circular shapes about 1 inch from each other.

Note: If you don’t have parchment paper you can just sprinkle your table with some powdered sugar.

3.) Make more circular shapes until you have no more of the mixture. Let them sit for around 24 hours in a room temperature area and they will be all dry and ready to eat. Also combine them in 2’s. Place on a serving dish and enjoy!

  • 150 Grams of Water
  • ½ Tbsp of Powdered Sugar
