Bite size, Cheese Cupcakes are a perfect dessert for any party, wedding, or other large gathering. They also go great with tea and coffee in a small setting. Don’t be discouraged by the large amount of ingredients, this recipe is a breeze to from start to finish.
Ingredients:
You’ll need 4 packets of bel-vita crackers, 4 table spoons of melted butter, 3 packs of cream cheese, 2 table spoons of corn starch, 1/2 a cup of sugar, 1 egg, 3 table spoons of corn starch, 1/2 a cup of sugar, 1 egg, 3 tablespoons of sour cream, a 1/2 a teaspoon of vanilla sugar, 1/2 a cup of heavy cream, and 1 table spoon of blackberry jam and 24 blackberries. The amount of blackberries is optional because you can choose how much or if any you’d like to put on top of the finished petite cheese cupcakes, to make them look and taste more awesome.
Directions:
1.) To make cheese cupcakes, first, you crush your crackers. Then place your foil cups in your cheese cake form. Next, add your melted butter to your crushed crackers and mix.
2.) Using a spoon add the cracker mixture to each foil cup and press it down to the bottom. In a large bowl place your cheese cream, cornstarch, sugar, egg, sour cream, vanilla and heavy cream. Then mix it together well.
3.) While mixing, gradually add your blackberry jam. Then using a spoon add your cream onto each foil cup to the top. Bake at 325ºF for 20 minutes, then place blackberries on all the mini cheese cakes or as many as you like, the total amount servings is 24 so if you want all of them to have blackberries on top, you’ll need 24 blackberries.
