These Stuffed Egg Plants are phenomenal for any meal, they have a very refreshing taste and they include a lot of healthy vegetables.

  • 1 Pepper
  • 3 Egg Plants
  • 1 Pound of Shredded Pork
  • 1 cup of Shredded Mozzarella Cheese
  • 1 Onion
  • 3 Tomatoes
  • 3 Tbsp of Olive Oil
  • ½ Tbsp of Garlic Salt
  • ½ Tbsp of Salt
  • ½ Cup of Washed Rice
  • 1 Cayenne Pepper
  1. Starting off wash and dry all of your vegetables, continuing cut your egg plant in half and then cut out the center. Also dice all of your vegetables. Add all of your vegetables into a large mixing bowl and add your shredded pork, washed rice, onions and seasoning. Mix together well and using a spoon fill up each egg plant. Place your egg plants in a baking pan with olive oil, then cover with tin foil. Cook for 1 hour and 15 minutes on 375ºF.
  2. After take out your egg plants and add cheese on top, with out tin foil cook for 15 more minutes. Take out, place on a serving dish and enjoy.
