Thanksgiving Eggplants

 

To make Thanksgiving Eggplants you’ll need a pepper, 3 eggplants, a pound of shredded pork, 1 cup of shredded mozzarella cheese, an onion, 3 tomatoes, 3 tablespoons of olive oil,1/2 a tablespoon of garlic salt, 1/2 a tablespoon of salt, 1/2 a cup of washed rice, and one cayenne pepper.

 

Directions

 

 

1.) First, wash and dry all of your vegetables, then cut your eggplants in half cut out their centers. Next, dice all of your vegetables. Add all of your vegetables into a large mixing bowl and add your shredded pork, washed rice, onions and seasoning. Mix the contents of the bowl well and using a spoon to fill up each egg plant with the mixed ingredients. Place your egg plants in a baking pan with olive oil, then cover them with tin foil. Roast your eggplants for 1 hour and 15 minutes at 375ºF.

 

 

2.) Next, take out your eggplants and add cheese on top of each one. This time don’t cover them with tinfoil, and place your pan back in the oven to roast at the same temperature (375ºF) for 15 additional minutes. When time’s up place the eggplants in a serving dish and have a happy thanksgiving with your friends and family. God bless you!
