Stinging Nettle Soup: If you’ve ever touched stinging nettles you never forgot how it felt. The pain is unbelievable so who would want to eat such a plant in soup or anything else?  It turns out, stinging nettle looses it’s sting when you cook it or put it in boiled water. Be sure to use gloves when handling it until you get it cooking. Stinging Nettles are actually a superfood herb that have 10x more vitamin C than apples, and 5x more beta-carotene than carrots, among other nutrients such as calcium, potassium, magnesium, vitamin E, amino acids, etc. Now add all that to soup that contains potatoes, onions, eggs, etc. There’s very few foods we can think of that compare in terms of nutrients.

 

Ingredients:

 

 

To make Stinging Nettle Soup: You’ll need 1 pound (lb) of pork ribs, 3 liter (3.17 quarts) of water, 1 nd 1/2 tablespoons of salt, 2 cooked eggs, 3 potatoes, 1 onion, 1 tablespoon of butter, 4 ounces of stinging nettle leaves, 3 bay leaves, 1 tea spoon of Mr. Dash, 1 tea spoon of garlic salt, 1 teaspoon of pepper, and 3 tablespoons of sour cream.

Directions:

 

 

1.) In a large pot add your ribs, water, and salt, then boil the contents of the pot. After that, lower your flame so the contents don’t boil over out of the pot, and continue to boil the pot for 10 minutes. Next, wash, dry, peel, and cut your potatoes. Then, add your potatoes into the pot and continue to boil it until your potatoes have a soft texture. Then, peel and cut your onion, put it into a hot buttered skillet and fry it for 4 minutes on a high heat. After the 4 minutes are up throw the cut onion into the pot.

 

 

2.) Wash, dry and cut your stinging nettle leaves and add them to the pot.

 

 

3.) Peel your hard boiled eggs and shred them, then add them to the pot.

 

 

4.) Last but not least, add the sour cream and seasoning, and once again bring your pot to a boiling point. When the pot has boiled again you’re ready to eat he bowl of nutrients and savory delight.
