Ingredients:
You’ll need 1 eggplant, 2 peppers, 1/2 of a garlic clove, 1 onion, 1/4th of a cup of olive oil, 1 and 1/2 table spoons of sugar, a handful of parsley, and 1 table spoon of vinegar.
Directions:
1.) First, wash and dry all of your vegetables. Next, cube your eggplant and throw it into boiling water for 3 minutes. Then drain the water and let your eggplant cool, After that, dice and cut your onions, peppers, and parsley. Then add all of your ingredients and seasoning to a large bowl and mix.
2.) Next, add olive oil.
