  • 1 EggPlant
  • 2 Peppers
  • ½ Garlic clove
  • 1 Onion
  • ¼ cup of Olive Oil
  • 1½ Tbsp of Salt
  • 1½ Tbsp of Sugar
  • Handful of Parsley
  • 1 Tbsp of Vinegar
  1. ) First, wash and dry all of your vegetables. Next, cube your eggplant and throw it into boiling water for 3 minutes. Then drain the water and let your eggplant cool, After that, dice and cut your onions, peppers, and parsley. Then add all of your ingredients and seasoning to a large bowl and mix.
  2. ) Next, add olive oil.
